Hi guys! A pancake recipe, delicious treat for all gourmets. Let’s celebrate International Pancake Day together. I would like to show you how to make delicious pancakes with flair.

Tuesday 9.2.2016 is an International Pancake Day, so let’s celebrate then! Pancakes are simply incredible, whether sweet or savoury. Batter made with soya milk & gluten-free flour suitable for those with allergies. So no excuses! It’s pancake day, why not to treat your self with something yummy? All you need is a delicious flour-based batter. Shell we? This recipe is for about 30-40 pancakes (depending on the thickness & pan size).

Ready:

0,8kg Wheat flour
4 Eggs
1l Milk
2tbsp(s) Sugar
1tbsp sunflower Oil, plus extra for frying
200ml Sparkling water
pinch of Salt

Steady:

Pancake pan, electric or hand whisker, large bowl, ladle.

Go:

Put the flour into a large mixing bowl. Crack the eggs into the middle, then pour in about 500ml milk, add sugar, pinch of salt & 1 tbsp oil. Start whisking, once all the flour is incorporated, beat until you have a smooth, thick paste. Add the rest of the milk & whisk to loosen the thick batter. Pour in sparkling water & whisk until you have a batter that is the consistency of slightly thick single cream.

Heat the pan over a moderate heat (oil is optional). Try your first pancake. Ladle some batter into the pan, tilting the pan to move the mixture around for an even layer. Leave to cook, undisturbed, for about 30 secs. The pancake should turn golden underneath, then turn. Adjust heat & thickness of your batter accordingly. To loosen the thick batter simply add more sparkling water.

Sweet classics

Choose your favourite toppings. Creamy: Sour cream, double cream, whipped cream, ice cream, soft cheese. Spreads: Nutella, chocolate spread, choco / caramel topping, choco powder, jam, honey, maple syrup. Something fresh & healthy: Strawberries, blueberries, banana, pineapple.

Savoury recipe

Mexicano
A quick savoury / slightly spicy sauce: 2 small onions, 2 carrots, 2 peppers, sausages / bacon & can of sweetcorn. Wash, peel, cut into a small pieces. Fry, in the same order, on a bit of oil. Stir & add tomato sauce, salt, black pepper, paprika & a bit of chilli. Use rocket leaves & olives on the side.

American sweet & bacon bomb

TIPs:

  • Sparkling water makes pancakes softer & airy
  • You can freeze the pancakes for 1 month, wrapped in cling film or make them up to a day ahead
  • Add 2 more tbsp(s) of sugar if you prefer it them on it own
  • Add 2tbsp(s) of raisins to the batter to add an extra flavour
